This is a quick and simple fry up which can be enjoyed for brunch, or any time you feel like some old-fashioned country soul food. The heart will spoil quickly, so either clean these right away, and then freeze until required, or cook as soon as you receive your pork pack.
Ingredients:1 pork heart
bacon eye pieces Fried eggs, according to number of guests Beans, tomato, mushrooms, capsicum or other fry up ingredients to serve. |

Remove the rind from your bacon tails and fry off in pan. Put these aside to drain on paper towel, then snack on them, at your convenience. |
Remove the white valves and aorta (your dog will go crazy for these).

Slice, cross ways, while cleaning any remaining blood out of the heart.
Fry the heart in a pan, turning once, when brown.
Add the bacon when the heart is turned. |
Cook eggs and side dishes according to taste in the same pan, with, during or after cooking your bacon and heart.
Serve immediately, with parsley or spring onions to garnish.
